CEO Profile of YAMADAYA Shokuryo Co Ltd.

Hiroto Mochida is the CEO of YAMADAYA Shokuryo Co Ltd. He was born in 1967
and holds a Bachelor of Faculty of Business Administration from HOSEI University.
He started his career working for Kanagawa Honda Cars Sales Company as a sales
person, and then joined YAMADAYA Shokuryo Co Ltd. The Japan Rice Retailers
Association certified him as a 3-Star Rice Master Japan. In 2004, he became
CEO of YAMADAYA Shokuryo Co Ltd.The Japan Rice Retailers Association has
then certifiedhim as a top rank 5-Star Rice Masterin 2005.

Hiroto Mochida’s presence in media includes
newspaper, magazine, radio and TV.
He was selected as a jury for "Rice Cooker
Ranking"held by Nikkei Inc.
He was also on the jury at “Best Rice Contest”
held by Shizuoka prefectural government,
at“Rice Tasting Contest” held by Kijimadaira
Nagano, and at“Rice Tasting Contest - World Cup”
held by Kijimadaira Nagano.

~Background on the Launch of “YAMADAYA international”

YAMADAYA Shokuryo Co Ltd. (formerly called "Yamadaya Rice Shop") is dedicated
to the contribution of improving the health of the customers.
For the past seven years, we have been visiting elementary schools giving lessons
aboutrice. This experience has deepened our own understanding. We realized that rice
fields have a biological diversity. If rice fields decrease in number, environmental issues
may increase and the effect on the beautiful scenery of rural areas would lead to the
loss of regional cultures and customs. This problem made us think that rice fields need
to be conserved more to provide for a potential world-wide food crisis.

Currently, approximately 30% of the rice fields in Japan are not allowed to be cultivated because of the rice acreage reduction policy.
If these rice fields are reused for other crops, it wouldn’t matter. However, if these rice fields are left in poor condition and abandoned because villagers grow old or leave the village, it would be hard to cultivate them once more and may even become irreparable.

Why is the rice acreage reduction policy in effect? It is for adjusting national demand
and maintaining the price stability. Planting rice for export is allowed as long as it
doesn’t affect the national demand. Our purpose as a member of YAMADAYA
international is to protect the biodiversity and carry on the regional cultures and
customs by plantingand selling rice which have been produced in the rice fields
under the rice acreage reduction policy.

If you purchase our “environmental preservation rice”, the rice producers will feel
hopeful about the future. And it will also develop the next generation of agriculture
workers.

Efficacy of brown rice

How to cook tasty brown rice

【Ingredients】(1cup=180cc)
Brown rice: 2cups (360cc) / Water: 3cups (540cc) / 2 pinches of salt

< If you use a pressure cooker, you can enjoy the glutinous texture.>
1: Put the brown rice into a bowl. Add water and wash it by stirring gently.Change the water 3 to 4 times.
Then drain in a colander.
2: Put the clean brown rice and water into a pressure cooker. Place it over medium heat, then wait until the water is boiling.
3: When it boils, add 2 pinches of salt and place the lid on. Set the heat to high until it gains pressure.
4: When the pressure reaches the limit and the pressure cooker whistles, hold it there for 30 seconds. Then reduce the heat to a lower level and hold it there about for 23 minutes.
5: Turn the heat to a high level and hold it there about for 20 second to remove excess fluid.
Then turn off the heat.
6: When the pressure reduces on its own, open the lid and stir the rice.

< If you use a rice cooker, you can enjoy the plain taste>
1: Put a brown rice into a bowl. Add water and wash it by stirring gently. Change the water 3 to 4 times. Then drain in a colander.
2: Put the clean brown rice and 2 pinches of salt into a rice cooker.
Turn the rice cooker on.
3: When it is finished, steam the rice in the rice cooker for 15 minutes.
Then open it and stir it.

Meister means "master" in German. Germans are known as people with practical skills
in their profession. They have established the Meister system and operate it in a
stringent manner to raise excellent technical experts. Only a person, who has the
experience as a specialist of rice, is qualified for the examination for Rice
Meister. The Rice Meister examination is conducted by Japan Rice Retailers
Association. Rice Meister has 2 ranks, 3-Star and 5-Star.
The highest enlisted rank of all is the 5-Star Rice Meister.
